Cara Memasak KUE KERING KASTENGEL

RESEP (±55 pcs)
100 gram mentega
15 gram susu bubuk full cream
80 gram keju parut (cheddar/edam/parmesan)
130 gram tepung terigu protein rendah

1 kuning telur untuk olesan
keju parut secukupnya untuk topping

cara membuat:
1. lembutkan mentega sebentar
2. tambahkan susu bubuk (ayak), lalu aduk rata tapi jangan berlebihan
3. tambahkan keju parut, aduk hingga campur rata
4. tambahkan tepung terigu protein rendah (ayak), lalu aduk sampai terbentuk adonan.. bisa pakai tangan sebentar tapi jangan sampai berlebihan.. pastikan tangan sudah cuci bersih sebelumnya
5. gilas dan cetak adonan sesuai selera
6. tata di atas loyang, lalu oven sampai matang sekitar 40 menit..
cara cek sudah matang/belum:
~ ambil 1 cookies, belah 2, kalau bagian dalam masih ada yang berwarna transparan/basah berarti belum matang.. lanjutkan panggangnya..
suhu yang aku pakai kisaran 120-130 celcius tapi tergantung masing masing oven ya..

NOTE:
~ tepungnya bisa disangrai dulu kalau mau..
~ bisa pakai tepung terigu serbaguna kalau tidak ada tepung terigu protein rendah, tapi dicampur maizena sedikit
~ kejunya terserah mau pakai cheddar/edam/parmesan.. disesuaikan budget aja..
~ takaran keju disesuaikan selera (bisa lebih/kurang)
~ adonan memang gak pakai kuning telur ya karena teksturnya pas menurut aku.. tapi klo suka tekstur yang pyur muprul bisa ditambahin kuning telur

RECIPE
100 grams butter
15 grams full cream milk powder
80 grams grated cheese (cheddar/edam/parmesan)
130 grams cake flour

1 egg yolk
grated cheddar cheese

how to:
1. smooth butter a bit
2. add in (and shieve) full cream milk powder, mix until combined (dont overmix)
3. add in grated cheese and mix just until combined
4. add in (and shieve) cake flour, mix just until combined/dough form.. use hand if necessary but dont over mix.. and makes sure your hands are clean
5. roll and cut the dough as you like then arrange on baking tray
6. brush with egg yolk and topping with grated cheese
7. put it in the oven.. time and temperature will vary for each oven..
mine 120-130 celcius for about 40 minutes
~ how to check when its done:
take out 1 cookies, if the inside still translucent or wet then its not done.. put it back in the oven

NOTE:
~ you can roast your flour first if you like.. but i dont
~ you can use all purpose flour if you like, but mix with a bit of corn starch first
~ you can use cheddar or edam or parmesan cheese.. depend on your budget
~ you can adjust the amount of cheese (more or less)
~ i’m not using egg yolk in the dough.. i like the texture already..
